that's what Skaterina wants for dinner

a perfect cheese omelet like the one she had

at the Boomerang Cafe in Amsterdam

sometime long ago

when they lived in Rome

and were in Amsterdam on location for a film

the Boomerang cheese omelet is the standard for all other omelets

it was the first one she had fallen in love with

she believes it is due to the European cheese

not American cheese "food"

she believes it was the elusive Gruyere

which this podunk town she lives in now

never has any Gruyere

it is the cheese called for in many French recipes

wdnt you know

like for the melting tops of French Onion Soup

and for the rice and carmelized onion dish called a Soubise

that wants gruyere you bet not some dumb ol' baby swiss

but

the other day Skaterina discovered not only a wonderful cheese

called Sant' Andre (kind of an upscale Brie) and a wedge of Gruyere

before she had a chance to use it however the grandson used it on

get this

TACOS !

so we've got the gruyere and fresh local eggs with yolks called "rosso"

and all we need now is someone who can make an omelet that will

knock Skaterina's socks off

those new socks KnitterMe just finished with a rather lousy Kichener Stitch

yes, she is still trying to master the Kitchener

nevermind

let's go have a Mojito

and then the perfect omelet

or after the Mojito if Skaterina survives a dose of booze

maybe it wont matter if the omelet is perfect or not
