Cocnut Butter
Caterina Cacciatore is tinkering with our menu
she made coconut butter
toast organic, unsweetened coconut flakes, cool, and then grind them up in a food processor
if you whir it up long enough the coconut becomes liquid and then it resolidifies and is a handy no need to refrigerate jar of butter
it is similar to peanut butter in that it will stick to your roof
during the grinding process we tasted the toasted coconut crumbs and they were delicious
the taste and texture reminded Skaterina of toasted coconut or toasted almond Good Humor bars from the 1940's
oh my
we anticipate the coconutty crumbs sprinkled on lightly steamed or roasted cauliflower
we really cant wait
